
All classes are $40 unless otherwise noted.
Classes are from 6pm-9pm. We will do day classes if you can find 12 people.
Take home classes provide 5 meals for 4 persons and cost $125.
7/7 - Fresh From the Garden- A selection of tomatoes recipes. Creative recipes for Summer Squashes, Green Beans, Perfect
Roasted Fingerling Potatoes, Fried and other Okra dishes (if ready),
Eggplant (Caponata, Parmesan and dips). With an emphasis on using
fresh basil, thyme, rosemary, sorrell, different mints....
7/13 - Breakfast/Brunch Class –A perennial favorite Caramel
French Toast, Eggs Benedict, Flaky Biscuits, Belgian Waffles, and yes
delicious Healthy Pancakes made with whole wheat flour/oatmeal/
yogurt served with organic maple syrup. Heuvos Rancheros too.
7/14 - Caribbean Cooking- Lots of flavor – Jerk Chicken
appetizers with mango salsa, Avocado Salad, Eggplant Curry Soup, Jerk
Pork with Chorizo Fried Rice, Jicama Slaw and Orange Glaze – Dessert
-Grilled Plaintains with Rum Brown Sugar Glaze & Key Lime Sorbet
7/20 - Putting by & Canning –The basics of preserving the bounty of
the garden. Focusing on the simplest, tastiest, with the most cost
& time effective methods using the least amount of freezer space.
E.g. roasting tomatoes concentrates the flavor/compacts them & they
can be stored flat in the freezer in a Freezer Bag. We will CAN
salsas, one jam, hot pepper jelly, apple butter, and pickled beets &
bread & butter pickles. Also, freezing preparations for green beans,
corn, okra, and squash.
